A mandoline is an essential tool for the kitchen because it makes perfectly even slices, juliennes and crinkle-cuts in the fraction of a time it would take with a knife and a cutting board. The OXO Good Grips V-blade Mandoline Slicer seems to be a consumer favourite for both it’s simplicity of use and quality of slicing provided for the price it costs you to get it (ca. $39.99).
With this V-shaped mandoline slicer, you will get very uniform pieces of produce, which is helpful for even cooking, baking, deep-frying or even dehydrating! Of course, evenly sliced food also makes for a great presentation in that spring salad you bring to the potluck dinner!
What’s the best thing about the OXO Good Grips V-Blade Mandoline Slicer?
- The first thing that impressed me is that the cup-shaped food holder has a central set of four pins/skewers that pierce into the food and hold it into place, and a central plate that pushes the food back OFF the spikes (and out of the hollow interior) as you slice.
- Produces very uniform shaped fruits or vegetables.
- The V-shaped blades are made of hardened stainless steel and are SHARP!
- You can make straight or crinkle cuts with the included straight and/or wavy blades, and also prepare French fries or julienne your produce.
- Its textured food runway adds extra glide and keeps the ingredients from sticking to the mandoline.
- This OXO mandoline slicer has four slice thickness settings: 1/8″, 1/8″, 3/16″ and 1/4″, easily adjustable via the soft handle and turning knob. The slice thicknesses are indicated in both metric and imperial measurement units.
- A large cup-shaped food holder securely holds the food in place with four pins in the inside that pierce into your fruit or vegetable when placed inside the cup.
- It’s easy to store! The mandoline locks closed and its feet fold in for safe and compact storage.
- The feet are additionally protected with a non-slip surface for more safety.
- You have to wash the blades by hand, but the food holder and top rack are dishwasher safe.
How Do I Adjust Its Settings Or Change The Blade?
This V-shaped OXO mandoline has 4 slice thickness settings, which are clearly marked and colour-coded on the soft-grip turning knob on the side (see picture on the left). You can adjust from a slice as thin as 1/16″ to as big as 1/4″.
The mandoline is handy to cut softer fruits and vegetables like tomatoes, plums or peaches, as well as more solid produce such as potatoes or onions. It works as well at slicing ripe tomatoes (which many other mandolines mangle), as it does at other foods like cucumbers, zucchini, or radishes. The textured ridges on top and throughout the whole food runway keep your food from sticking.
When you use the cup-shaped food holder, you’ll notice that it features 4 pins in the inside that will pierce into the produce you’re about to slice. This is great as it keeps the food securely fastened to the holder, and therefore your fingers away from the blade. However, it will leave about 1/4″ of the fruit or vegetable that will need to be knife sliced as a leftover.
All blades are stored neatly and securely underneath the mandoline. To change the blade, first unlock the mandoline top by clicking on the little black button on the knob, and turning it to the unlock position to the left. This will allow the mandoline top to fold up, and you’ll be able to put a different type of blade in. Remove the white V-shape plastic piece. Lift up the top of the runway and place your blade of choice in its slot.
Replacing the blade on this mandoline might take a little getting used to at first, but if you need any extra help, an instruction manual is included or you can also download the OXO Good Grips V-Shaped Mandoline Manual here.

How Do I Clean This Mandoline?
Cleanup of this mandoline slicer is not a problem. Immediately after you’re done slicing, use some hot water and a bit of liquid soap directly on the whole slicer. As long as there is no food dried on it anywhere, you’ll be able to easily clean the mandoline. Be extra careful around the blade.
TIP: The mandoline is easier to use if you put it on a sturdy cutting board while you chop food. This also makes clean-up of your work area a breeze afterwards as you’re not scraping sliced food off the counter but it’s already ready for you there on the cutting board!
How Do I Keep The Cutting Blade Sharp?
Mandoline blades cannot be sharpened with your regular knife sharpening tools. However, since the blades are made of hardened stainless steel, you shouldn’t have to worry about the blades going dull for quite a while after your initial purchase – depending of course on how often you use your slicer and how well you take care of it during the washing, clean-up and storage process. A good thing that is also environmentally friendly is that you can buy replacement parts quite inexpensively on oxo.com. No need to throw away the whole unit!
