This is important if you’re planning to use regular yeast instead of dry yeast. You cannot let regular yeast sit around for 20 minutes without giving it nutrients as it’ll start to fall flat. Yeast feeds on the flour added to your recipe. If you mix yeast with water and let it sit for 20 minutes without flour, which provides nutrients for yeast, then the yeast will be in bad shape by the time when the mixing starts. However, if yeast stays dry, then it can wait a long time without nutrients.
