The only thing it doesn’t work well with is Soy milk or Almond milk. You are going to have to use dairy.

Notice that I am recommending the 3-stage sharpeners over the 2-step ones. This is because in the 3-step, you get a “step 2” for restoring the important V-shape of the blade. 2-step sharpeners only do a touch-up sharpen, and then a polish. Over time, this leaves the shape of the knife less than optimal.
Cost-wise, it’s not a huge difference to get the good tool. It’s just around $30 for this 3-Stage Knife Sharpener, and it is a kitchen accessory well worth your while having.
